Israeli chopped salad

Method:

  • 4 tomatoes, diced
  • 1 English cucumber, seeded and diced
  • 1/2 red onion, finely diced
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 tbsp parsley

Ingredients:

Combine tomatoes with cucumber, onion and salt in a large bowl. Season with fresh pepper. Stir in oil, lemon juice and parsley until well coated.

Serves 4 | Per serving 137 calories, 2 g protein, 11 g carbs, 11 g fat, 3 g fibre, 300 mg sodium. Good source of vitamin C.
