Golden beet poutine
Give your beets a delicious new twist and bake them up like french fries in this creative dish from Chef Randy Feltis.
Golden beet poutine
Serves 2-4
Ingredients:

- 6 large golden beets with tops
- 2 shallots, sliced
- Splash of olive oil
- 2 nubs butter
- ½ cup dry white wine
- 2 balls fresh mozzarella (8oz) tore into chunks
- ½ cup diced soppressata (salami)
- Salt & pepper, to taste
Method:
Remove tops from beets and set aside. Cut beets into french fry form, about ¼ inch thick.
Over medium heat, add olive oil and beet fries to large sauté pan. Toss lightly and roast 350F degrees for 15 minutes, shaking every five minutes.
Clean tops and cut into same fry size. Bring beets back to the stove top to finish and make gravy.
On medium-high heat, start to caramelize and add butter, shallots, diced salami and finally the beet tops.

Deglaze with white wine and just before plating add mozzarella. Toss lightly and serve!
Note: This dish is a beautiful one-pan wonder. Any salami or bacon can be used, or leave it out for a vegetarian dish. It can be used as a side or main dish. Enjoy!
