Crispy pork belly tacos
We sure do love tacos, especially when they go beyond the basics! This fresh take on tacos is a hearty lunch or dinner the whole family will love.
Crispy pork belly tacos

Special tools: baking tray and rack, foil

Ingredients:
- 1 lb pork belly
- 1 apple
- 6 radishes
- Handful of mint
- 1 cup toasted macadamia nuts
- 1 head romaine
- 1/4 cucumber
- 2 cups white wine
- 1 tbsp chopped garlic
- 2 cups chicken stock
- 1 chili pepper, chopped
- Splash of olive oil
- 1 lime
- Salt and pepper
Method for pork:
Season belly with salt and pepper, garlic, and chili. Place in a roasting pan, add white wine and chicken stock, cover with foil, and bake at 350 degrees for 100 minutes.
Let rest, place on bakers rack and tray. Score skin with a sharp knife and broil till shattering crisp.
Method for slaw:

Thinly slice apple, radish, cucumber and mint add olive oil and lime juice. Toss with salt and pepper.
Assembly:
Cut romaine lettuce into taco shells and serve with a small piece of belly, slaw and garnish with macadamia and radish sprouts.
