Crispy pork belly tacos

We sure do love tacos, especially when they go beyond the basics! This fresh take on tacos is a hearty lunch or dinner the whole family will love.

Crispy pork belly tacos

Prep time: 15 minutes
Cook Time: 2 hours
Special tools: baking tray and rack, foil 
Serves 6 

Ingredients:

  • 1 lb pork belly
  • 1 apple
  • 6 radishes
  • Handful of mint
  • 1 cup toasted macadamia nuts
  • 1 head romaine
  • 1/4 cucumber
  • 2 cups white wine
  • 1 tbsp chopped garlic
  • 2 cups chicken stock
  • 1 chili pepper, chopped
  • Splash of olive oil
  • 1 lime
  • Salt and pepper

Method for pork:

Season belly with salt a‎nd pepper, garlic, and chili. Place in a roasting pan, add white wine and chicken stock, cover with foil, and bake at 350 degrees for 100 minutes.

Let rest, place on bakers rack and tray. Score skin with a sharp knife and broil till shattering crisp.

Method for slaw:

Thinly slice apple, radish, cucumber and mint add olive oil and lime juice. Toss with salt and pepper.

Assembly:

Cut romaine lettuce into taco shells and serve with a small piece of belly‎, slaw and garnish with macadamia and radish sprouts.
