Devan Rajkumar shares his famous delicious spin on lasagna that your kids will love!
Kid-friendly lasagna
Ingredients:
- 1 9 x 13 baking dish
- 14 oven-ready lasagna noodles (2 extra for cracks)
- 1 lb ground Italian sausage
- 4 cups crushed tomatoes
- 2 cups tomato sauce
- ½ cup tomato paste
- ½ cup sweet onion, diced
- 4 cloves garlic, minced
- 1 green zucchini, cut into ½” pieces
- 1 yellow zucchini, cut in to ½ pieces
- 1 ½ cup roasted red peppers, sliced ½’ strips
- 1 ½ cups smoked mozzarella cheese, shredded
- 2 cups ricotta
- 1 cup parmesan
- 1 tbsp brown sugar
- 2 tbsp olive oil
- 10 basil leaves
- 1 tbsp fresh chopped oregano
- 1 tbsp dry oregano
Method:
Preheat oven to 350F.
Place olive oil in a large frying pan on medium heat. Add onions and saute until translucent.
Then add garlic and fry for one minute before adding in zucchini and tomatoes (including paste).
Add brown sugar and cook mixture for 7-8 minutes, liquid content should reduce by almost half.
Remove from heat and combine chopped herbs, remove to a tray.
In the same pan add ground sausage and fry on medium heat until cooked through, approximately 9-10 minutes.
Combine with vegetable mixture to make the lasagna filling.
In a mixing bowl combine the mozzarella, ricotta, and ½ cup of parmesan.
Begin assembling lasagna. Lightly cover bottom of the dish with filling, then lay down 3 lasagna sheets lengthwise pressing down gently. Pat down a thin layer of cheese, followed by another layer of filling and then noodles.
Repeat this process twice more until noodles are used up, there are 2 extras that can be used to fill in cracks. The top should be a thin layer of cheese and filling.
Cover the dish with foil and bake for 35 minutes.
Remove from oven and turn on broiler. Remove foil and sprinkle remaining parmesan, return to broiler for 1-2 minutes or until perfectly golden brown.
Allow to cool for 15 minutes before serving.
Serves 6-8
