Ingredients:

- 3 packs gelatin powder
- 2 cups sugar
- pinch salt
- 1 cup water
- 1 tbsp rose water
- juice & zest 2 lemons
- few drops red food colouring (to make it pink)
- icing sugar to coat
Method:
Mix the gelatin, sugar, salt and water into a thick bottom pot. Bring to a slow boil and simmer for 10 minutes (do not stir while simmering).
After 10 minutes remove from the heat and stir in the lemon juice, zest, rose water and food colouring.
Pour into a square pan pyrex dish and chill overnight.
Once set, cut into squares and coat with icing sugar.
