Lamb pilau
Ingredients:

- 4 cups diced lamb meat
- 1 tbsp grape seed oil
- 2 cups diced white onion
- 1 clove minced garlic
- 1 cup dried apricots
- 1 cup basmati rice
- 2 cups lamb or chicken stock
- 1 cinnamon stick
- 1 cup toasted almonds
- 1 cup fresh mint leaves
Method:
Heat the grape seed oil in a large casserole pot over high heat. Add in the lamb and brown the meat on all sides.
Once brown add in the onions and garlic.
Continue to brown and then add in the basmati rice and cinnamon stick. Stir until the grains for 30 seconds and then add in the lamb stock and apricots.
Simmer until the lamb is tender and the rice is cooked.

Now add in the chopped mint, toasted almonds. Season with salt, pepper and serve.
