Rhubarb Bellini

Mix some fresh rhubarb with a little bit of bubbly to create this yummy cocktail you can enjoy all summer long.

Mix some fresh rhubarb with a little bit of bubbly to create this yummy cocktail you can enjoy all summer long.

Rhubarb Bellini

Prep time: 4 min 
Cook time: 8 min 
Serves plenty

Ingredients:

  • 3 stocks rhubarb sliced
  • 2 cups sugar
  • 3 cups water
  • 5 oz Prosecco

Method:

In a sauce pot, add all ingredients and simmer for 8 minutes. Remove and blend. Place in flat container and freeze.

Once frozen, scrape with fork to make a rhubarb slushie.

Place 1 oz in cocktail glass,‎ top with 5oz of Prosecco, and garnish with mint.

Add sunshine, friends and enjoy!
