Mix some fresh rhubarb with a little bit of bubbly to create this yummy cocktail you can enjoy all summer long.
Rhubarb Bellini
Prep time: 4 min
Cook time: 8 min
Serves plenty
Ingredients:
- 3 stocks rhubarb sliced
- 2 cups sugar
- 3 cups water
- 5 oz Prosecco
Method:
In a sauce pot, add all ingredients and simmer for 8 minutes. Remove and blend. Place in flat container and freeze.
Once frozen, scrape with fork to make a rhubarb slushie.
Place 1 oz in cocktail glass, top with 5oz of Prosecco, and garnish with mint.
Add sunshine, friends and enjoy!
