Smoked turkey spinach salad
Ingredients for salad:

- 3 ounces lean smoked turkey, slices or chopped
- ¾ cup shredded low-fat cheese
- ¾ cup fresh corn kernels
- ½ cup canned black beans, drained and rinsed
- ½ cup halved cherry tomatoes
- ½ cup chopped bell pepper (any colour)
- ¼ finely chopped red onion
- 2 cups fresh baby spinach
Ingredients for dressing:
- 2 tbsp chopped fresh cilantro
- 2 tbsp low-sodium canned or fresh tomato juice
- 1 ½ tsp minced garlic
- 1 ½ tsp extra-virgin olive oil
- 1 ½ tsp sherry vinegar or other vinegar
- Juice of ½ lemon
- Salt and pepper
Method for dressing:
In a large bowl, combine cilantro, tomato juice, garlic, olive oil, vinegar, and lemon juice
Whisk until well blended. Season with salt and pepper
Method for salad:

Add turkey, cheese, corn, beans, tomatoes, bell pepper, and onions. Toss well.
Divide spinach between 2 plate. Top with turkey salad.
