Tagliatelle with lobster in a saffron cream sauce

Tagliatelle with lobster in a saffron cream sauce

Ingredients:

  • 7 oz. tagliatelle, egg noodle
  • 8 oz. lobster meat, cooked (available in many supermarkets)
  • 2 shallots
  • 2 strips bacon or pancetta
  • ½ cup green peas
  • ½ red peppers, julienne
  • 1 bunch chives, chopped
  • ½ pint cherry tomato cut in half
  • 1 tbsp. marjoram
  • 1 pinch of saffron
  • 1 cup 35% cream
  • 1 tbsp. butter
  • Salt and pepper, to taste
  • Parmigiano Reggiano, if desired

Method:

Preheat a sauté pan and in it add the butter along with the shallots and bacon. Sauté for a minute or so, add the peppers and the marjoram and sauté another minute. Add the tomatoes and sprinkle the saffron, stir well then add the cream. Season to taste, simmer for a minute then add the lobster meat, green peas and the strained pasta and toss well.

Serve immediately sprinkled with chives and if desired, good quality grated Parmigiano Reggiano.

If you are using fresh lobster and you prefer to cook it at home, make sure to collect all the corals and juices from the head of the lobster and add them to the cooking. Use a rolling pin to extract the meat in the legs as well by lining them up and rolling hard to pressure the meat out from the toes to the joint in one continuous motion.

Serves 2 people. Prep time 30 minutes. Cooking time 15 minutes.
