Old-school eggless Caesar salad
Mm, there’s nothing better than a nice Caesar salad with bacon and parmesan cheese. Even though Caesar salad is still a salad, it is known to be unhealthy because of its high-fat ingredients. Don’t let that stop you this New Year and try Randy Feltis’ version of Caesar dressing that contains less cream and less fat than the usual.
Old-school eggless Caesar salad

- 1 head romaine
- 1 cup of really awesome olive oil
- 3 tablespoons of capers
- 2 anchovies
- 1 lemon zest and juice
- 1 cup finely grated parmesan
- 4 strips of triple-smoked bacon
- 1 clove of garlic
- Salt and pepper
- Hot sauce
- Worcestershire sauce
Method
In a wooden bowl crush garlic with a fork and salt, add anchovies and make a paste. Chop capers and add in with lemon juice, zest and olive oil. Season with parmesan, hot sauce, Worcestershire and salt and pepper.
On a non-stick tray bake bacon at 425F until super crisp.
Quarter romaine stock to tip and place on plate. Drizzle with Caesar dressing and top with crispy bacon and parmesan.
