Wake up to a warm, hearty breakfast! This slow cooker meal is easy to prep the night before.
Slow cooker oatmeal with coconut, banana and almonds
Ingredients:
- 2 bananas
- 1 1/4 cups steel-cut oats
- 1 can light coconut milk
- 1 1/2 cups almond milk
- 3/4 cup water
- 2 Tbsp coconut or brown sugar
- 1 Tbsp ground chia seeds (optional)
- 1 tsp vanilla
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- Pinch of salt
- 1/4 cup whole almonds
- Shredded unsweetened coconut (for garnish)
Method:
Slice one of the bananas. Combine banana slices, oats, coconut and almond milks, water, sugar, chia, vanilla, cinnamon, ginger and salt in a slow cooker. Give it all a gentle stir. Cook on low for 8 hours.
Serve topped with freshly sliced bananas, almonds and shredded coconut.
