These easy, healthy pancakes get a big protein boost thanks to the addition of Greek yogurt! Whip these up and amaze your kids with pancakes on a weekday!
Blender pancakes
Ingredients:
- 1 1/2 cups rolled multigrain oats
- 3/4 cup milk
- 1/4 cup Greek yogurt
- 1 1/2 Tbsp strawberry or blueberry preserves
- 1/2 tsp vanilla extract
- 2 Tbsp unsalted butter
- Agave or maple syrup for drizzling
Method:
Place the oats, milk, yogurt, preserves and vanilla in a blender. Blend until smooth.
In a large frying pan over medium heat, melt 1 Tbsp butter. Drop 2 Tbsp of batter into the hot pan to form a pancake. Make 3 or 4 depending on the size of pan. Cook until bubbles form around the edges, 3 to 4 minutes, then flip. Cook for another minute and then remove from the pan. Add the remaining 1 Tbsp of butter to the pan and repeat. Serve the pancakes warm with syrup.
