These chocolate-covered rum balls will melt-in-your-mouth! Festive and delicious.
Truffle rum ball lollipops
Ingredients:
- 1 cup icing sugar
- 1 cup ground almonds
- 3 oz bittersweet chocolate, grated
- 3 oz dark rum
- 1 tsp vanilla
- Pinch of salt
- Pinch of instant coffee
- 2 cup melted milk chocolate
- Lollipop sticks
Method:
In large bowl, whisk icing sugar, almonds, coffee, salt and bittersweet chocolate. Stir in 1/4 cup (50 mL) of the rum and vanilla until solid moist mass. Press together. Chill until firm enough to roll, about 15 minutes.
Roll by rounded teaspoonfuls (5 mL) into balls, moistening and wiping hands with damp cloth as needed. Gently insert lollipop stick and dunk into melted chocolate. Stick lollipop sticks into styrofoam or anything that will keep it upright until chocolate sets.
