Bring a winter inspired dish to your table with this winter white salad from Chef Massimo Capra.
Winter white salad
Ingredients:
- 1 cup celery, thinly sliced
- 1 medium Belgian endive, julienne
- 1 whole fennel, julienne
- 1 bunch green onions, chopped white part mostly
- 1/2 cup coriander or Italian Parsley, chopped
- 2 vanilla persimmons, thinly sliced
- 1/2 pomegranate, seeded
- 2 tbsp pistachio, toasted and cracked
- 1 tbsp honey
- 1 lemon, Juiced
- 1 tsp Dijon mustard
- olive oil to taste
- Salt & Pepper to taste
Method:
Prepare the vinaigrette by mixing the honey with the mustard. Then add the lemon juice, salt and pepper to your liking.
Slowly add the oil to about three times as much as lemon juice.
Mix all the vegetables in a bowl and dress with the vinaigrette, toss well.
Divide into plates, sprinkle some pomegranate seeds and pistachio on each plate.
