Our Kathy Buckworth sent us a side dish recipe that her family always devours. Here’s what she had to say about it: You’d think that kids wouldn’t like something called Green Bean Casserole. But it’s a family favourite I get asked to make for nieces, nephews, and my own kids, every Thanksgiving.  It’s from my Shut Up & Eat book (but I never have to tell them to do that with this. They eat it.)

Green bean casserole

Ingredients:

  • 1 can French’s French Fried Onions (or maybe two if you want to snack while cooking)
  • 6 oz milk
  • Dash of pepper
  • 1 can cream of mushroom soup
  • 4 cups frozen or fresh green beans (or broccoli or cauliflower — these vegetables work well alone or in combination)

Method:

Preheat oven to 350˚F.

In a medium-sized casserole, mix all ingredients reserving half the can of onions.

Bake for 30 minutes and stir.  Top with remaining onions and bake another 5 minutes.

Serve and eat (if you’re not full from the first can of onions you already scarfed…or is that just me?).
