Chef Michael Bonacini shares a recipe for the classic pairing of strawberries and cream.
Ingredients:
- 2 small baskets of ripe Ontario strawberries, washed, hulled, and quartered
- ¼ cup maple syrup
- 1/8 tsp vanilla extract
- 2 cups 35 % cream
- ¼ cup ice wine or sparking (Peller Estates)
- 2 slices of pound cake (homemade of store bought)
- Powdered sugar for dusting
Method:
Place the washed and cut strawberries in a large clean bowl, and add the ice wine or sparkling, toss gently and allow to sit for 20 – 30 minutes. Next, whip the cream adding in the maple syrup and vanilla extract until a good stiff peal has been achieved.
To serve:
Place 4 pieces of pound cake on a serving plate spoon the strawberries over top the pound cake, and drizzle with any juice that may have come from the strawberries. The pound cake will absorb those juices. Top the strawberries with a good mount of whipped cream dust with powdered sugar and serve.
Note:
Strawberries and cream are a classic wherever strawberries and cream are found. You can substitute just about any berry and even peaches, for delicious experience.
