Donair wraps with fresh veggies

Donair wraps with fresh veggies

Prep time: 15 minutes / Total time: 60 minutes

Ingredients:

  • 1/2 lb or 225 g ground beef, extra-lean
  • 1/2 lb or 225 g ground turkey
  • 2 tsp flour
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp fresh ground pepper
  • 1/4 tsp cayenne (optional but amazing)
  • 1/2 cucumber
  • 2 celery ribs
  • 1 red bell pepper
  • 1/2 lb or 225 g broccoli florets
  • 10 grape tomatoes
  • ranch dressing, fat-free
  • 2 tbsp mayonnaise, light
  • 1 tbsp 1% milk
  • 1/2 tsp vinegar
  • 1 1/2 tsp sugar
  • 1 head green leaf lettuce
  • 2 Roma tomatoes
  • 1/2 red onion
  • 6 flour, multigrain or corn tortillas, 8″
  • sweet Thai chili sauce (optional)
  • 1/2 cup cheddar cheese, light, shredded

Method:

  1. Preheat oven to 375º F.
  2. Combine meat and spices in a large bowl. Mash with a potato masher for about 5 minutes. Or even better – in a food processor for approximately 3 minutes if you have one! (The mashing or processing is very important!)
  3. Form meat into a long, wide loaf shape onto a broiler pan or a cookie sheet with rack. Make your loaf short in height (1 1/2″). Place in preheated oven. Set timer for 55 minutes (or until internal temp is 180º F).
  4. While the meat is cooking, rinse cucumber, celery and pepper. Cut cucumber into rounds, celery into sticks and sliver pepper. Rinse broccoli and cut into bite size pieces. Rinse tomatoes. Serve with ranch dip.
  5. Whisk together mayonnaise, milk, vinegar and sugar to make donair sauce. Set aside.
  6. Tear lettuce into bite-size pieces directly into salad spinner. Rinse and spin dry. Wash and cut tomatoes into small chunks. Sliver onion. Set aside.
  7. Tightly wrap tortillas in foil. When the timer rings, take the meat out, turn oven off, and place wrapped tortillas in the oven until ready to serve.
  8. To serve, slice meat into thin slices, and reheat in a stove-top fry pan (unless you have just pulled it out of the oven). Pile meat into warm wrap. Drizzle with donair sauce, Thai sauce, toppings and cheese.
