Harley Pasternak’s easy Niçoise salad
Ingredients:

- 4 ounces green beans, trimmed and halved
- 1 can (6 ounces) white albacore tuna packed in water, drained
- ¼ cup light red wine vinegar
- Salt
- 4 cups baby lettuce leaves
- 1 medium tomato, cored and thinly sliced
- 2 hard-core eggs, yolk discarded
- 4 thin slices whole wheat baguette
Method:
- Bring a small saucepan of water to a boil over high heat. Cook the beans for 3 minutes or until the beans are tender-crisp. Drain and rinse with cool water
- In a small bowl, mix tuna and 2 tablespoons of the vinegar until combined. Season to taste with salt.
- On a medium platter, arrange the lettuce, tomato slices, beans and tuna. Drizzle the entire salad with the remaining vinegar. Slice the egg whites and arrange them on the platter. Serve with the baguette.
