This healthy cake is rich in chocolate flavour, but packs a decadent punch!
S’mores chocolate layer cake
Ingredients:
Cake:
- 1/3 cup semisweet chocolate chips
- ¼ cup hot water
- 1 cup granulated sugar
- ¼ cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- ½ cup cocoa powder
- ¾ cup low-fat sour cream
- 1/3 cup light mayonnaise
- 1 cup all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
Topping:
- ¾ cup semisweet chocolate chips
- ¼ cup low fat evaporated milk
- 1 cup marshmallow fluff
- 2 tbsp chocolate chips
- 7 graham cookie wafers broken into small pieces
Ingredients:
- Preheat the oven to 350°F. Lightly coat two 8” round baking pans with cooking spray.
- Combine the chocolate chips and hot water in a small bowl. Microwave on High for 30 seconds. Mix until smooth.
- In a large mixing bowl, combine sugar, oil, eggs and vanilla with a whisk until smooth. Add the cocoa powder, sour cream, mayonnaise and melted chocolate. Mix until combined. Add the flour, baking powder and baking soda. Mix just until combined.
- Pour into the pan and bake for 18 minutes or until a tester comes out dry. Let cool.
- Assembly: Melt chocolate and milk in microwave for 20 seconds just enough to mix chocolate and milk until smooth. Let cool for 5 minutes to thicken
- Heat marshmallow for 10 seconds in microwave to spread.
- Place one cake layer on plate, spread half chocolate sauce over top, half of marshmallow, sprinkle with 1 tbsp chocolate chips and ½ broken graham cookie crumbs.
- Place other cake layer over top, pour remaining chocolate sauce over top, add marshmallow spread, cookie crumbs and remaining chocolate chips.

Cook time: 18 minutes
Make ahead: Assemble cake up to a day in advance and keep covered and refrigerated.
