This traditional Cajun dish is jam-packed full of intense flavours and is perfect for warming you up on a cold winter’s day.
Spicy saffron jambalaya
Ingredients:
1-2 tsp grapeseed oil
1 cup diced chicken breast
½ cup sliced chorizo sausage
½ cup cooked mussels
1 cup grilled shrimp
2 cups crushed tomatoes & juice
2 cups chicken stock
2 cups rice
½ cup sliced shallots
2 cloves garlic, finely chopped
1 pinch saffron
1 cup diced red peppers
1 whole red Thai chili
½ cup diced celery
1 tbsp roughly chopped cilantro
2 tbsp butter
Method:
In a large pot, use the grapeseed oil to brown the diced chicken. Once golden, remove and set aside.
Now add the butter to the pot and melt over medium heat. Add in the shallots and garlic, and sauté for one minute without colour. Add the rice, saffron, red Thai chili and celery. Continue to sauté for another minute, then add the crushed tomatoes, chicken stock, red peppers. Bring to a simmer, then add the chicken, chorizo and continue to simmer for 15 minutes.
Now add the grilled shrimp, mussels and continue to simmer for another 10 to 15 minutes. Until the rice is soft to the bite. Add the cilantro, season with salt and pepper. Remove from the heat and serve.
