Turkey chili

Serves 4

Ingredients:

1 lbs of ground turkey
1 can of diced tomatoes
1 can of tomato sauce (no sugar)
1/2 medium onion
2 celery sticks, diced
2 carrots, peeled and diced
1 cup of sliced mushrooms
3 cloves of garlic
1/2 tsp each of – dried basil, parsley, oregano and cinnamon
1 tbsp of chili powder
1 bay leaf
1 can of kidney beans, drained and rinsed

Instructions:

In a large pot, cook turkey over medium heat until no longer pink. Drain off fat. Stir in tomatoes, sauce, onion, celery, carrots, mushrooms and spices. Simmer uncovered for 40 minutes, stirring occasionally.

Add kidney beans and simmer for another 5 minutes. Remove bay leaf and enjoy!
