Smoked salmon roll with caviar topping

Ingredients:

1 lb good quality, pre-sliced smoked salmon

1 cup goat cheese, fresh & soft

2 tbsp onions, chopped finely

2 tbsp capers, drained & chopped

1 cucumber, julienned

4 sheets nori seaweed

4 tbsp trout or salmon caviar

4 tbsp tempura bits or crispy bagel chips coarsely crushed

Method:

Cream the goat cheese with the onions and capers and set aside.

Lay the nori sheet on a bamboo mat and the lay the salmon on it. Spread the goat cheese mix gently and very thinly, then run a line of cucumbers and sprinkle some tempura bits over it. Roll the salmon like a cigar, nice and tight.

Use a sharp knife to cut into bite-sized pieces and serve topped with a scoop of trout caviar.
