Cheese and zucchini make an excellent topping to this crostini, a light and healthy appetizer from Massimo Capra.
Crostino with zucchini and formaggio
Ingredients:
1 cup onion, finely chopped
2 cups zucchini, shredded
4 tbsp olive oil
Salt & pepper to taste
4 oz stracchino cheese
1 baguette cut into ½ thick crostini
Parmigiano, grated to taste
Method:
Cook the onions and zucchini in olive oil in a skillet over medium heat until the zucchini are tender and all the moisture has dried up. Remove from the heat and immediately add the cheese, stir well and spread over the bread evenly.
Garnish with more olive oil and some grated parmigiano.
