This easy mussels dish from Randy Feltis is full of rich flavours – perfect to warm you up on a cold evening.
Ingredients:
2lb fresh mussels
1/2 lb chorizo, sliced
1/2 16/20 peeled shrimp
1 leek, julienned
1/2 small head fennel, julienned
2 cloves garlic
2 tablespoons extra virgin olive oil
2 nubs butter
2 cups white wine
Method:
In a large pot on medium high, add olive oil, sweat garlic, leeks, fennel until slight coloring on pot.
Add chorizo, shrimp, butter and mussels.
Deglaze with white wine season with salt and pepper. Cover and let steam for 4 min.
Garnish with fresh herbs and serve with crusty bread!
