This fresh and healthy salad is perfect for easy summer entertaining.
Ingredients:
2 pink grapefruit
2 bunches radishes
1 bunch kale
2 avocado
4 baby cucumber
1 ball fresh mozzarella
1 bunch fresh mint
2 oz extra virgin olive oil
Salt and pepper
Method:
In a large bowl, thinly slice cucumber, radishes and mint. Dice avocado and mozzarella. Segment grapefruit above bowl and squeeze remaining juice over veggies. Chop kale and add to salad. Finish with olive oil salt and pepper.
Please note the grapefruit acts as the vinegar in this salad, so make sure to get all you can out of it. Can be done hours in advance or on the fly in minutes.
This simple yet refreshing salad will be a hit on its own, however don’t be afraid to add some farmers market smoked sausage or maybe bacon!
