Radish and Beet Salad
Radishes and beets are full of nutrients, and Anna Olson shows us a great, healthy and delicious salad recipe.
Ingredients:

2 lbs – fresh beets
2 tbsp – white vinegar
2 tbsp – extra virgin olive oil
1 bunch – fresh radishes (about 10)
3 tbsp – chopped fresh chives

2 tbsp – chopped fresh mint
1 tbsp – fresh lime juice
salt and pepper
Instructions:
1) Cover the unpeeled beets with cold water and add the vinegar. Bring beets up to a simmer and cook, uncovered, until they are fork-tender, about 50 minutes.

2) Drain and let cool.
3) Trim the stem ends from beets and peel by rubbing gently with your hands or a paper towel.
4) Cut the beets into wedges and toss with the olive oil. Chill until ready to serve.
5) Wash the radishes and cut into wedges.
6) Toss the radishes with the chives, mint and lime juice.

7) When ready to serve the salad, combine beets with radishes and season to taste.
