Stewie’s Oven-Roasted Salmon a.k.a. Fish in Disguise

Even if you're not a fish fan, this candied salmon recipe will win you over!

I admit fish is not my favourite. It’s not my mom’s favourite either.

But I love all three of the salmon recipes in this book. These are for

all of you who need your fish in disguise. Stewie’s barbecue sauce is

anything but gourmet and everything delicious.  

Stewie’s Oven-Roasted Salmon a.k.a. Fish in Disguise

SERVES 6

INGREDIENTS

6 centre-cut salmon fillets, each 5 oz (150 g)

1/2 cup (125 mL) butter

1/4 cup (60 mL) ketchup

2 tbsp (30 mL) soy sauce

1 tbsp (15 mL) prepared mustard

1 clove garlic, crushed

HOW TO

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place salmon on baking sheet.

In a small pot, combine butter, ketchup, soy sauce, mustard and garlic. Cook over medium heat, whisking frequently, until thickened. Brush salmon with half the sauce.

Bake for 8 to 10 minutes per inch (2.5 cm). Serve salmon with remaining sauce.
