There are a ton of fresh flavours in this nutrient- and protein-packed salad.
Vegetable Salad with Apples, Nuts, and Red Quinoa
Serves four or more people
Cooking/preparation time 20 minutes
8oz chicken breast, cooked & julienned
8 oz turkey breast, deli-style julienned
1 cup carrots, julienned
1 cup celeriac, julienned
1 cup golden beets, julienned
1 cup daikon radish, julienned
1 cup apple, julienned
1 cup green onions, sliced
1 cup escarole, shredded
1 cup frisée, chopped
4 tbsp pine nuts, toasted
1 cup red quinoa, cooked
Combine all the ingredients in a bowl and mix well
For the vinaigrette:
Dijon mustard
Olive oil
Cider vinegar
Honey
Salt & Pepper
Add salt, pepper, Dijon mustard and cider vinegar in a bowl and mix using a whisk until well combined, start adding oil a little at the time until the desired flavor and consistency is achieved, pour over the salad and toss well, serve immediately.
