Dandelions aren’t just garden pests! They also make a delicious hot salad with some olive oil, garlic and lemon.

Dandelion Greens

Ingredients:

1 bunch dandelion greens

¼ cup olive oil

1 garlic clove, sliced

4-6 lemon wedges

Method:

1. Rinse the dandelions in a cold-water bath. Exchange the water at least 3 times.

2. Cut off the white ends of the dandelions and discard. Discard any brown or wilted greens.

3. Cut into thirds and place in a pot of salted boiling water for 10-15 minutes.

4. Remove the greens and place in a large water bowl.

5. In a small bowl, mix the olive oil and garlic. Drizzle over the hot greens.

6. Squeeze lemon juice on each individual plate before serving.
