An elegant appetizer, and festive-looking with the green of the crushed pistachios.
New Year’s Nibbles: Pistachio-Crusted Lamb Lollipops
1 rack lamb, cleaned down to the bone
1 cup crushed pistachios
1/4 cup Dijon mustard
Salt & pepper
Season lamb with salt and pepper.
Sear lamb on all sides in a pan on med high heat with vegetable oil until golden brown (not cooked all the way through).
Roast in oven at 450F for 8 or 9 minutes or until medium rare.
Remove from oven and let rest.
Paint lamb with Dijon mustard and coat with pistachios.
Reheat in oven until pistachios turn golden.
Remove, cut lamb and serve.
Can be served with your favourite side mustard.
