New Year’s Nibbles: Olive Oil Fingerling Potato French Fries

1 bag fingerling potatoes
2L bottle olive oil
1 block parmesan cheese
1 bunch green onion
Salt & pepper

Paper cones
Heat oil to 325F.
Cut potatoes into shoestring size.
Blanch in 325F oil for 3 minutes.

Remove and let rest.
Fry again for 4 minutes until crisp or brown.
Place onto paper towels to remove excess oil.
Place in paper cup.
Garnish with grated parmesan and freshly chopped green onion.

Serve with wooden fork and fancy ketchup.
