New Year’s Nibbles: Butternut Squash Tortellini
Wonton wrappers fill in for sheets of fresh pasta in this easy one-bite appetizer.
New Year’s Nibbles: Butternut Squash Tortellini
1 small butternut squash

1 cup white wine
1 cup vegetable stock
1 clove garlic, minced
1 package wonton wrappers or fresh pasta
1 egg

Nub butter
Fresh sage
Dice butternut squash into half-inch cubes.
Put into sauce pot with white wine, vegetable stock, garlic and salt and pepper.

Bring to boil for 4 minutes.
Puree and let cool.
Place teaspoon-sized amount in the middle of a wonton wrap.
Brush edges with egg wash and fold corner to corner to make a triangle.
Fold corner to corner again to shape a tortellini.

Boil in water for 1 minute.
Fry sage and butter in frying pan and put boiled tortellini into mixture until lightly browned. Serve on tasting spoon.
