House-Made Icewine Marshmallows

House-Made Icewine Marshmallows

Makes 40 (one inch) marshmallows

Ingredients

3 packs Knox gelatin

3/4 cup water

2 cup sugar

2/3 cup corn syrup

1/4 tsp salt

2 tbsp Icewine Syrup

1 vanilla pod

(Icing sugar for dusting)

Pour 1/2 a cup of the cold water and all the gelatine into the bowl of a stand mixer and soak for 10 minutes.  At the same time, mix the remaining 1/4 cup of water, icewine reduction, sugar and corn syrup in a pot.  Bring to a boil and continue to boil for one minute.  Remove from the heat and add to the mixing bowl with the soaked gelatine.  Add the salt and whisk on high for 8 minutes.  Then add the seeds from the vanilla pod and whisk for another 2 minutes on low speed just to mix.  Line a square cake pan with plastic wrap, spray with non stick. Pour into cake pan and allow to set in a cool dry area (not in the fridge).  Once the marshmallows are firm, cut into even squares and dust with icing sugar.
