I always thought this was Bo’s secret recipe and that she had a few
tricks up her sleeve. Then I realized she just uses the recipe on the
bag of cranberries! Even my grandmother has some quick fixes.
Bo’s Cranberry Sauce
Makes 3 to 4 cups (750 mL to 1 L)
Ingredients
1 cup (250 mL) sugar
1 cup (250 mL) water
2 cups (500 mL) fresh or frozen cranberries
How to:
In a medium saucepan, combine sugar and water. Over medium heat, bring to a boil, stirring until sugar dissolves. Add cranberries and return to a boil. Reduce heat and simmer gently, stirring occasionally, for about 10 minutes. Let cool completely.
Serve with roast chicken or turkey, in a chicken sandwich or with chicken pot pie.
Kitchen Notes: At Thanksgiving and Christmas you can find bags of fresh cranberries in the produce section. The rest of the year, you will find cranberries in the freezer section.
Double the recipe and put into half-pint (250 mL) jars to give as holiday gifts.
Offer to make the cranberry sauce for a family holiday potluck. It takes no time, it’s so simple and it requires only a bag of cranberries, so it’s low cost too.
Variations: You can dress this up by adding diced apple or pear and throwing in a cinnamon stick.
Substitute brown sugar for the white and applesauce for the water.
