Holiday Hors D’Oeuvres: Speck Rolls with Potato, Sauerkraut and Pickles
You’ll find speck next to prosciutto in the deli section of your grocery store.
Speck Rolls with Potato, Sauerkraut and Pickles
8 slices of speck (smocked prosciutto), very thinly sliced

2 mini potatoes boiled, cut into strips
4 sour gherkins, cut into strips
1/2 cup sauerkraut, deli style
1 1/2 tbsp grainy mustard
1 tbsp mayonnaise

Mix the mustard with the mayonnaise and set aside, squeeze the sauerkraut well to remove most of the moisture and set aside.
Lay the speck on a wax paper sheet and keep each slice separate, at the top of each slice place a little sauerkraut and one slice of pickle and one slice of potato, spread a little mustard on it then Roll the speck like a cigar and serve
Do not make this to long in advance as the speck will discolour after a few hours.
