Michael’s version of this classic sandwich incorporates creamed spinach and smoked ham.

Michael’s Gourmet Grilled Cheese Sandwich

Serves 2

Ingredients

2 slices of ciabatta 1/4 inch/5 mm thick or bread of your choice

Olive oil

1/2 shallot, finely chopped

1/2 clove garlic, minced

1 cup drained and squeezed cooked spinach

2 tbsp whipping (35 %) cream

Salt and pepper

Pinch of nutmeg

1/4 cup Dijon mustard

12 thin slices maple-glazed or smoked ham

1 cup grated smoked, mild, and aged cheddar

Pinch of cayenne pepper

Method

Place the ciabatta slices on a baking sheet. Next, drizzle them with olive oil and toast under the broiler until light golden brown. Cool.  Next, in a saucepan, heat a splash of olive oil over medium heat and gently cook the shallots and garlic for 2-3 minutes.

Next, add the spinach and cream; season with salt and pepper, and nutmeg. Continue to cook and stir for 2-3 minutes, then remove from the heat.

Next, spread each slice of bread with a little Dijon mustard. Next, top with a slice of ham, a thin layer of creamed spinach, and sprinkling of grated cheese. Broil gently until the cheese begins to melt. Cut into 1/2-inch squares, and dust with a little cayenne pepper and serve.
