A trio of strawberry recipes to celebrate the season — starting with this luxurious dessert.
Strawberry Shortcake Martini
Serves 6
2 pints of fresh Ontario strawberries, halved
1 small angel food cake diced
750 ml Greek yogurt
100 ml brandy
100 ml Godiva White Chocolate Cream
2 vanilla pods
1 bunch of fresh mint
250 ml toasted macadamia nuts
1 dark chocolate bar, smashed
Local honey to taste
Mix yogurt with brandy, Godiva and vanilla. Add honey for desired sweetness. Slice mint, chiffonade-style, and add let stand for 20 minutes.
In your favorite martini glass, layer angel food cake, then yogurt, then strawberries. Repeat and garnish with macadamia nuts and dark chocolate.
Strawberry Compote
2 pints strawberries sliced
250ml sugar
250ml water
In a pot simmer the sugar and water in till sugar is dissolved. Add strawberries, bring to boil and jar.
This compote will be perfect in cocktails, Sundaes on top of fresh strawberries and cream
Strawberry Bubbles
1oz strawberry compote
1oz Campari
4oz Champagne
Touch of expensive balsamic vinegar
Garnish with mint
