This Sara Foster-inspired dish is a great way to serve up colour and crunch.
Roasted Reds
Ingredients:
1 pint grape tomatoes
1/2 red onion, sliced
1 lb (about 2 bunches) assorted small radishes, rinsed, leaving 1/2” stem in tact
2 tbsp good quality olive oil
4 sprigs thyme
Salt and pepper
Method:
Preheat oven to 400.
On a lined cookie sheet, spread out tomatoes, red onion and radishes and pour oil over. Add thyme, gently stir and season with salt and pepper.
Roast 25 minutes or until radishes are soft but still colourful. Serve immediately.
Serves 4-6
Kitchen note: This dish is just as delicious using radishes only.
