Dress up these potatoes with a salad of your choice.
Veggie Potatoes
Ingredients:
4 large yellow potatoes
1/2head broccoli
1/2 head cauliflower
1 red pepper
1 bunch green onions
6 oz cheddar cheese
1 cup sour cream
Method:
Rinse the potatoes. Prick them several times each with a fork and microwave them for 13 to 16 minutes, until done. Turn them after 8 minutes.
Meanwhile, floret and steam the broccoli and the cauliflower for 5 minutes until just tender.
Clean and dice the red pepper and the green onions and set aside.
Grate the cheese and set aside.
Let the potatoes stand for 5 minutes and then cut them open down the middle. Top with the veggies, the cheese and the cup sour cream.
