Savoury meets sweet in this tart, a perfect appetizer when you have company.

Peach, Tomato, Mozzarella And Basil Tart

4 pre-baked puff pasty tart shells
1 tbsp butter
1/2 cup sliced shallots
1 cup small cherry tomatoes
1 cup mini buffalo mozzarella
1/2 cup fresh basil leaves
1 cup grilled sliced peaches
4 tbsp aged balsamic vinegar
cracked black pepper and sea salt to season

Tart

Melt the butter in a large fry pan over medium heat.  add the shallots and sauté for one minute without colour.  Add the cherry tomatoes and continue to sauté for another two minutes.  Now add the diced grilled peaches and warm through.  Remove from the heat and add the mozzarella and basil leaves.  Season with the black pepper, sea salt and divide evenly to fill the pre baked tart shells.  Drizzle with the aged balsamic vinegar and serve.
