Three Melon Salad with Arugula, Goat Feta and Balsamic Vinegar

Serves 4 to 6

Ingredients

1 cup chopped cantaloupe
1 cup chopped honeydew
1 cup chopped watermelon
1 cup diced feta cheese
1 ½ cups baby arugula
¼ cup chopped lemon balm
2 tbsp balsamic vinegar
4 tbsp extra virgin olive oil
Sea Salt and cracked black pepper to taste

Peel, seed and roughly chop the cantaloupe, honeydew and watermelon.  Gently mix the melon with the feta cheese, arugula leaves and chopped lemon balm.

In a bowl mix the balsamic vinegar, extra virgin olive oil.  Pour over the melon salad and season with sea salt and cracked black pepper.
