Summer Salads: Beef Bresaola Salad with Balsamic Strawberries

Beef bresaola is beef inside round cured in a style similar to prosciutto. If bresaola is not available, prosciutto makes a delicious substitute.

Beef Bresaola Salad with Balsamic Strawberries

1 pint fresh strawberries
3 tbsp balsamic vinegar
6 oz thinly sliced beef bresaola
4 cups loosely packed baby arugula
2 oz Parmesan cheese
Extra virgin olive oil, for drizzling
Freshly ground black pepper

1)    Wash and trim the stems of the strawberries and slice them into a bowl.  Toss berries with balsamic vinegar and set aside while arranging salad.  The strawberries can be prepared up to 4 hours ahead and chilled.
2)    To assemble salad, arrange bresaola to cover the bottom of 4 salad plates.  Top with arugula and shave Parmesan over the salad plate using a vegetable peeler.  Spoon the strawberries, including the balsamic overtop of the salad.  Drizzle the plates with olive oil and finish with a little black pepper before serving.
