Picnic Lemonade

Refreshing and delicious.

Ingredients

Simple Syrup
•1 cup water
•1 cup sugar
•Grated zest of 2 lemons
1 cup freshly squeezed lemon juice
4 – 5 cups of water (mineral, still or sparkling)
Sprigs of mint
Sliced lemons for garnish

Method
In a small saucepan, place 1 cup of water and 1 cup of sugar.  Bring to a simmer and stir until all sugar has dissolved.  Add the grated lemon zest, remove from heat, and allow to cool.  This mixture is called a simple syrup.

Place the simple syrup into a large glass bowl or jug, and add 1 cup of lemon juice and 4 – 5 cups of either sparkling or still water. 

Refrigerate for a minimum of 2 hours before serving.

To serve, simply throw a few ice cubs in a tall glass, add a sprig of mint and a slice of lemon, and fill with lemonade.
