Zucchini & Mint Pasta

A fresh pasta dish for the summer.

200g spaghetti
2 grated zucchinis
2 tbsp chopped mint
1 tbsp lemon juice
pinch chili flakes
sea salt & cracked pepper
finely grated parmesan

  • Cook pasta in a large saucepan of salted boiling water for 10-12 minutes, or until al dente. Drain and return to pan to keep warm.
  • Toss pasta with zucchini, mint, lemon juice, chili, salt and pepper.
  • Divide pasta mixture between serving plates, sprinkle with parmesan and serve.

Serves 2.
