Grilled Chicken with Cauliflower Macaroni & Cheese
4 whole grilled chicken breasts
2 cups cooked Cauliflower florets
4 cups cooked macaroni
2 cups grated white cheddar
1/2 cup 35% cream
1/2 cup 10% cream
2 tbsp chopped parsley
1/2 cup parmesan cheese
1/2 cup bread crumbs
Method:
Cut the grilled chicken breasts in a large dice and mix with the cooked cauliflower and cooked macaroni.

Place in a large casserole dish and set aside.
Warm the 35% and 10% cream in a sauce pot together over medium heat.
Once warm add 1 1/2 cups of the cheddar and remove from the heat. Whisk occasionally until the cheese is melted.
When all the cheese has melted pour over the Macaroni, chicken and cauliflower. Top with the remaining 1/2 cup of grated cheddar.
In a small bowl mix the parsley, breadcrumbs and parmesan.

Now sprinkle the parmesan breadcrumbs over the macaroni and bake in a 375F oven for 25 to 30 minutes. If the top starts to brown too much, cover with tin foil.
(for kids simply remove the cauliflower and chicken)
